Abstract

Introduction: Ensuring food safety is an essential element for promoting public health and is widely recognized as a priority in Brazil and worldwide. General Objective: To analyze the importance of adopting good hygiene practices in Food and Nutrition Units (FNU) for the prevention of Salmonella outbreaks in foods and food preparations. Methodology: Descriptive literature review. The bibliographic survey was conducted using databases recognized for scientific production in the field, including SciELO, PubMed, Google Scholar, LILACS, and other relevant sources, in order to broaden the scope and representativeness of the literature. Results and Discussion: Through the 15 selected studies, it was possible to understand how Salmonella contamination in Food and Nutrition Units (FNU) has been investigated, highlighting different contexts and methodological approaches. Conclusions: The evidence gathered in this study highlights that Salmonella contamination in Food and Nutrition Units and food service establishments is multifactorial, involving both inadequate hygiene practices by food handlers and failures in surface sanitization, temperature control, and handling of raw foods such as vegetables and meats.
