Abstract

Food and Nutrition Units (FNUs) play an important role in the production of safe meals,

with quality control being essential for food safety and public health. This study aimed

to analyze the importance of quality control in the receiving and storage of food

products in FNUs. It is a narrative literature review, descriptive in nature, with a

qualitative approach based on scientific articles and technical documents. The results

showed that receiving and storage are fundamental stages for food quality, highlighting

practices such as temperature control, expiration date verification, stock organization,

FIFO methods, traceability, and movement records. In addition, continuous training of

food handlers and efficient management contribute to the adoption of good practices

and the reduction of errors. It is concluded that quality control in these stages is

indispensable to prevent contamination, reduce losses, and ensure the safe and

efficient operation of FNUs.
